Cheeseburgers with Roasted Vegetables

Directions

  1. Preheat oven to 400. Chop vegetables, uniformly to promote even cooking. Lightly oil a baking sheet and add vegetables in single layer. 

  2. Drizzle with oil and season with salt and pepper. Roast for 30-35 mins or until fork tender.

  3. Meanwhile, heat oil in skillet over medium high heat until hot. Add hamburger patties and reduce heat to medium, cook for 6-8 mins each side.

  4. Lower heat to lowest setting and add cheese. Cover and heat until cheese is melted, about 1-2 mins. Remove from heat.

  5. Remove vegetables from oven and add to plate with hamburger. Serve and enjoy!!!!
