Corn and Potato Chowder
Serving Size: 6 People
Ingredients:
4 Cups
1 Tbsp
1 Cup chopped onion
3/4 Chopped Celery Stalk
2 Cloves of Garlic
2 tsp thyme
.125 tsp
12 ounces of potatoes
2 tbsp of chives
4 cups of vegetable broth

Heat oil in a large soup pot or dutch oven

Add onion and celery and cook for 2 minutes to soften. Then stir in seasonings and allow to cook for 1 more minute.

Add vegetable broth and let simmer for 5 minutes​

Take the potato, chop into bite sizes, then add potatoes and cook for 10 minutes or until 3/4 softened.

Stir in corn and add salt to taste, let simmer for 5 minutes.
