Directions

  1. In a pot place potatoes and add enough water to cover completely. Boil over med-high heat until fork tender, drain and once cooled cut into cubes.

  2. While potatoes are boiling heat oil in a large skillet over med-high heat. Add Chorizo, cook for 10 mins and drain off grease reserving about 1 tbs in pan. Place chorizo in a bowl to the side.

  3. Reheat reserved oil over med-high heat until hot, add onions and diced potatoes and cook for about 12 mins, or until brown. Stir in chorizo and season with salt and pepper to taste. 

  4. Serve and enjoy!!
