Directions

In a pot place potatoes and add enough water to cover completely. Boil over med-high heat until fork tender, drain and once cooled cut into cubes.

While potatoes are boiling heat oil in a large skillet over med-high heat. Add Chorizo, cook for 10 mins and drain off grease reserving about 1 tbs in pan. Place chorizo in a bowl to the side.

Reheat reserved oil over med-high heat until hot, add onions and diced potatoes and cook for about 12 mins, or until brown. Stir in chorizo and season with salt and pepper to taste.
