Directions

  1. Wash all vegetables, then chop into uniform chunks to promote even cooking. 

  2. Add oil to skillet over medium heat. Once hot add vegetables, salt, and pepper and cook for 5-7 mins or until fork tender.

  3. In separate pan fry up eggs.

  4. Place cooked vegetables on plate and top with a fried egg and shredded cheese.

  5. Serve and enjoy!
