Mongolian Beef Stir Fry

Ingredients:
1/4 large carrots grated
1/4 red bell pepper, sliced into strips
1 green onion, sliced into thick pieces
1/2 tablespoon oil
1/4 pound flank steak, thinly sliced
1/3 teaspoon cornstarch
50g stir-fry noodles

Sauce:
1/4 tsp fresh ginger, peeled and grated
1 garlic clove, peeled and grated
1/2 tsp honey
1/2 oz water
1/2 oz low-sodium soy sauce
1/4 tsp sriracha sauce

1. Begin by coating slices of beef in cornstarch, cook to medium (pink in the middle).
2. Combine ingredients for sauce in a bowl, whisk well.
3. Boil water and cook the noodles until done, drain and rise with cold water.
4. Heat some oil in a skillet, sauté the carrots, onions, and pepper for 2-3 minutes. Set aside.
5. Add the remaining oil to skillet then add the cooked beef, veggies, and noodles. Add sauce and cook until it thickens (about 3 minutes)
