Ingredients                                       Red Curry Paste

1.5 cups of chopped seasonal vegetables        Ingredients for 1 cup yield

0.5 tsp freshly grated ginger                           1/4 cup diced onion

1 garlic clove minced                                    3 tbsp lemongrass paste

0.5 tbsp red curry paste                                 4 cloves garlic

1/4 cup coconut milk                                    1 thumb-sized ginger

1.5 tsp soy sauce                                          2 tbsp lime juice

0.75 tsp brown sugar                                    3 tbsp coconut milk

0.5 tsp fresh lime juice                                   0.5 tsp cayenne pepper  

4 oz Spaghetti Pasta                                      0.5 tsp red chili powder

Salt to taste                                                  1 tsp ground cumin

Add water for desired thickness                        0.75 tsp ground coriander

                                                                 0.25 tsp pepper

                                                                 0.25 tsp ground cinnamon

                                                                 1 tsp brown sugar

                                                                 3 tbsp coconut milk

Red Curry Noodles

Directions

  1. Boil water in a pot, add pasta and cooked till tender, about 7 minutes. Drain the pasta.

  2. Heat oil in a pan. Add diced onion and stir. Add ginger garlic and stir till the mixture is golden colored.

  3. Add seasonal chopped vegetables and cook to desired tenderness.

  4. Add red curry paste and coconut milk and stir.

  5. Add cooked pasta, soy sauce mixture, and salt to taste. Add water for desired consistency. Stir well.

  6. Serve and enjoy!!
