Ingredients                                       Red Curry Paste
1.5 cups of chopped seasonal vegetables Ingredients for 1 cup yield
0.5 tsp freshly grated ginger 1/4 cup diced onion
1 garlic clove minced 3 tbsp lemongrass paste
0.5 tbsp red curry paste 4 cloves garlic
1/4 cup coconut milk 1 thumb-sized ginger
1.5 tsp soy sauce 2 tbsp lime juice
0.75 tsp brown sugar 3 tbsp coconut milk
0.5 tsp fresh lime juice 0.5 tsp cayenne pepper
4 oz Spaghetti Pasta 0.5 tsp red chili powder
Salt to taste 1 tsp ground cumin
Add water for desired thickness 0.75 tsp ground coriander
0.25 tsp pepper
0.25 tsp ground cinnamon
1 tsp brown sugar
3 tbsp coconut milk
Red Curry Noodles
Directions
- 
Boil water in a pot, add pasta and cooked till tender, about 7 minutes. Drain the pasta.

Heat oil in a pan. Add diced onion and stir. Add ginger garlic and stir till the mixture is golden colored.
 - 
Add seasonal chopped vegetables and cook to desired tenderness.
 - 
Add red curry paste and coconut milk and stir.
 - 
Add cooked pasta, soy sauce mixture, and salt to taste. Add water for desired consistency. Stir well.
