Stuffed Peppers

​Servings: 6

  • 6 whole bell peppers

  • 1 tbsp. olive oil

  • 8 oz ground beef

  • 1 medium onion, chopped

  • 3 cloves of garlic, chopped

  • 1 large zuchinni, diced

  • 4 roma tomatoes, diced

  • White Rice

  • 2 cups pepper jack cheese, shredded 

Directions

Top
  • Rinse the rice until water is clear. Add twice the amount of water and cook until soft.

  • Cut the tops off the peppers and scoop out the seeds.

  • In a pan, sauté the veggies for 3-5 minutes. Remove from heat and add the beef, rice, and half of the cheese.

  • Stuff the peppers with the mixture, place in a baking tray with a small amount of water. Top the peppers with the remaining cheese. Cover with foil.

  • Bake the peppers at 350 for 30 mins. Uncover and bake further if desired.

  • Serve piping hot and enjoy!!
