Stuffed Peppers

- 
6 whole bell peppers
 - 
1 tbsp. olive oil
 - 
8 oz ground beef
 - 
1 medium onion, chopped
 - 
3 cloves of garlic, chopped
 - 
1 large zuchinni, diced
 - 
4 roma tomatoes, diced
 - 
White Rice
 - 
2 cups pepper jack cheese, shredded
 
Directions
- 
Rinse the rice until water is clear. Add twice the amount of water and cook until soft.
 - 
Cut the tops off the peppers and scoop out the seeds.
 - 
In a pan, sauté the veggies for 3-5 minutes. Remove from heat and add the beef, rice, and half of the cheese.
 - 
Stuff the peppers with the mixture, place in a baking tray with a small amount of water. Top the peppers with the remaining cheese. Cover with foil.
 - 
Bake the peppers at 350 for 30 mins. Uncover and bake further if desired.
 - 
Serve piping hot and enjoy!!
