3 bunch kale
​Kale stuffing
10.5 oz ground beef
1 cup rinsed rice short rice preferred
2 onions chopped
1 tablespoon tomato paste
1 tablespoon pepper paste
half bunch parsley
1 tablespoon butter
1/4 cup olive oil
1 teaspoon crushed red pepper
salt pepper

Cooking water
2 cups water
1 tablespoon tomato paste
1 teaspoon salt
1 clove chopped garlic
1/4 cup olive oil
1 tablespoon butter
Directions

In a large pot of boiling water, add salt and kale leaves and cook for 7-8 mins. Drain the leaves. Carefully trim the thick stem portion of each leaf and set it aside.

In a saucepan cook the rice with twice the amount of water. Add salt to taste.

Combine meat stuffing with cooked rice and mix well.

Spread the kale leaf out in "V" shape with the tip facing you. Add stuffing at the tip and wrap the leaf to pack the filling from all sides. Watch the video on this page to learn how to wrap the leaf around the stuffing,.

Heat a little oil in a saucepan. Place the wrapped kale leaves in the saucepan. Add tomato sauce. Cover with a lid and simmer for 2-3 minutes. Alternatively, you can have the dolmas with yogurt.
