Chopped Seasonal Veggies

Cornmeal

Directions

  1. ​Heat oil in pan over med heat, add veggies and saute for 8-10 mins.

  2. Meanwhile in pot add 3 times the water as you have cornmeal. Bring water to boil and add cornmeal along with butter and salt and pepper to taste. Bring heat down to med-low and simmer until no water is left and cornmeal is soft. You now have polenta.

  3. Add sauce to veggies and heat thoroughly.

  4. Spoon sauce over polenta. Serve and enjoy!!!
