One Pot Chicken Dumpling Soup

Fruit Salsa and Pita Chips

1. Mix the fruits, and add sugar. Cover and chill it in the refrigerator till you make the pita chips.

2. Preheat the oven to 350 degrees. Cut the tortilla four times to make eight wedges.

3. Spread them in a single layer on a baking sheet. Spray with cooking spray or apply butter. Sprinkle cinnamon sugar.

4. Bake until golden and crispy, 8 to 10 minutes. Allow to cool. Then serve with chilled fruit salsa.

Ingredients:​​

3  tbsp Cold Unsalted Butter

1  Small Yellow onion, Minced

1/2 Cup Chopped Cabbage

2  Carrots, Diced Medium

3  Cups Chicken Broth

1/4 Cup All Purpose Flour

2  Cups Diced Cooked Chicken

1/3  Pound Green Beans

Salt and pepper

Dumpling Part:

1 Cup Flour

1 tsp Baking Powder

1 tsp Butter

1 tsp Salt

Directions

Melt butter or oil in a pot or large pan on medium-high heat.

Add vegetables and cook for 4 minutes. Add flour and cook for 1 minute while stirring.

 

Add broth, stir and bring to boil. Then reduce the heat and simmer for 5 minutes.

 

Stir in the chicken and season with salt and pepper.
 

Use dry dumpling mix and stir in milk or water equal to half of the dumpling mix.


Drop Heaping spoonfuls of dumpling batter in soup. Cover and simmer for 12 minutes.
