Pizza Dough Ingredients (yields 4 servings):​

1 tsp active dry yeast

2 1/4 cup all purpose flour

1 tsp salt

1 tbsp olive oil

Toppings: 

2 cup chopped mixed zucchini, bell peppers, onions.

1 sliced tomato.

1 cup shredded mozzarella cheese.

1 cup tomato sauce.

Directions

  1. Add 7/8 cup of warm water to a large mixing bowl, sprinkle yeast over water and allow it to dissolve (about 2 minutes). Next add flour, salt, and olive oil. Mix well (about 5 minutes). Lightly dust a work surface with flour and knead the dough. Divide into 4 portions then roll out to form the crust. 

  2. Preheat your over to 475 F. Then heat a drizzle of olive oil in a pan over medium heat. Add vegetables and sauté for about 3-5 minutes.  

  3. While the veggies are cooking, transfer the rolled dough to a pizza stone or baking sheet. Then spread a thin layer of pizza sauce over the dough. 

  4. Add the cooked vegetables and cheese to the pizza. 

  5. Place the pizza stone or baking sheet in the preheated oven. Bake 10-15 minutes until the cheese is golden.

  6. Vegan Alternative: To 'veganize' this recipe skip the cheese or use a dairy-free alternative.
