Veggie Pizza
Pizza Dough Ingredients (yields 4 servings):​
1 tsp active dry yeast
2 1/4 cup all purpose flour
1 tsp salt
1 tbsp olive oil

Toppings:
2 cup chopped mixed zucchini, bell peppers, onions.
1 sliced tomato.
1 cup shredded mozzarella cheese.
1 cup tomato sauce.

Add 7/8 cup of warm water to a large mixing bowl, sprinkle yeast over water and allow it to dissolve (about 2 minutes). Next add flour, salt, and olive oil. Mix well (about 5 minutes). Lightly dust a work surface with flour and knead the dough. Divide into 4 portions then roll out to form the crust.

Preheat your over to 475 F. Then heat a drizzle of olive oil in a pan over medium heat. Add vegetables and sauté for about 3-5 minutes.

While the veggies are cooking, transfer the rolled dough to a pizza stone or baking sheet. Then spread a thin layer of pizza sauce over the dough.

Add the cooked vegetables and cheese to the pizza.

Place the pizza stone or baking sheet in the preheated oven. Bake 10-15 minutes until the cheese is golden.
