Summer Pesto Mini Meatball Soup

  • 3 Tbs. Pesto

  • Meatballs

  • 2 Tbs. Parm Cheese

  • Salt and Pepper to taste

  • 2 Tbs. Oil

  • 1/2 Onion, diced

  • 4 Cups Chicken Broth

  • 4 Cups Water

  • 12 Ounces Ring Pasta

Directions

Top
  • Heat oil n large pot over medium heat, add onion and cook for 5 mins.

  • Add meatballs to pot and add broth.

  • Bring to simmer and stir in pasta. Cook uncovered for 10 mins stirring often.

  • Once pasta is cooked stir in the pesto. Garnish with Parm Cheese.

  • Serve and enjoy!!!
