Serving size: one person
Ingredients:

3 oz pasta

1 cup diced root vegetables

1 potato 

½ cup tomato puree

1 tsp vegetable bouillon

Water

Salt and pepper to taste

Directions

  1. Dice the potato into small cubes, similar to other root vegetables.

  2. Pour all ingredients into a pot

  3. Add 3 cups water and let the mixture cook on medium heat for 20 minutes or until the vegetables are cooked. Add salt and pepper to taste.

  4. Serve the curry on the rice and enjoy!!
