Pan Roasted Pork Chops with Potatoes

Directions

Preheat oven to 400, cut potatoes and seasonal vegetable into uniform pieces to promote even cooking.

Put vegetables, in a single layer, into a baking pan and drizzle with oil, roast for 20 minutes.

Season pork to liking with salt and pepper.

Pull out pan and stir vegetables.

Place each pork chop on top of vegetables and roast for another 25-30 mins or until pork reaches 145 degrees.
