Directions

  1. Preheat oven to 425 then oil the inside of a baking pan. Chop all your vegetables, uniformly to promote even cooking then set both aside for later.

  2. Next, mix the first 4 ingredients in a large bowl and slowly whisk in the oil, reserve 1 Tbs of the mixture. Add vegetables to bowl and toss to coat. 

  3. Place pork chops and vegetables in baking pan and brush chops with reserved mustard. Roast for 10 mins.

  4. Turn chops and stir vegetables, roast for 20-25 mins longer or until vegetables are tender. 

  5. Serve and enjoy!
