Tofu Salad and Soup

Serving Size: 1 people

Ingredients:

1 Scallion

1 tbsp salt

2 Cups Romaine Lettuce

1 Cup Fried tofu

1 Avocado

1/4 Cup of Corn 

1/2 Cup Cucumbers 

1/2 Cup Tomato

Pan Fried Tofu Seasoning:

Corn Starch

Black Pepper

Salt

Chili Powder 

Garlic Powder 

Paprika Powder

Olive Oil

​

Tahini Sauce:

1cup tahini 

1 cup water 

6 tbsp lemon juice

1 teaspoon salt

Directions

Tofu Salad

  • ​Wash and dry lettuce, Chop roughly, and place in a large bowl

  • Dice cucumbers, half cherry tomatoes, finely slice red onion and place in the same large bowl. 

  • To make the tofu- drain and dry tofu with a towel or paper towel cube into ½ inch cubes 

  • Make a mix of cornstarch, garlic powder, paprika, salt, and pepper and coat the tofu in this mixture. 

  • Warm up a large pan with olive oil and fry for 12 minutes, flipping every 2 minutes so all sides are golden. 

  • To make the dressing 

  • In a medium mason jar measure out 

    • 1cup tahini 

    • 1 cup water 

    • 6 tbsp lemon juice

    • 1 teaspoon salt 

  • Shake the mason jar until salad dressing is combined 

  • Microwave corn based on the instructions on the back of the bag and then add to the big bowl

  • Mix the salad ingredients and portion into bowls except for tofu and dressing

  • Add fried tofu and salad dressing to preference

Lentil Soup

  • Saute one large diced onion and ginger garlic paste, add dice two tomatoes, lentils, curry powder and bay leaf,


  • Add 3 times water and bring cook on medium high heat for 20 mins or till lentils are cooked.

  • Add salt to taste.
