Chicken Burrito Bowl

Ingredients:

1/2 chicken breasts
1/2 tbsp virgin olive oil
1/4 tbsp paprika
1/4 tsp cumin
A pinch of ground chili pepper
A pinch of salt
A pinch of black pepper

1/4 cup corn canned
1/4 cup black bean canned
1/4 cup rice boiled
1/2 of romaine lettuce chopped to fill 2 cups
1/4 avocado sliced
1 tbsp sour cream
1 tbsp shredded cheddar cheese

Directions

  1. Start by rinsing the rice. Next add rice and water to a pot then bring to a boil. Cook about 15 minutes.

  2. Next cook your chicken (if raw) or warm in the microwave (if canned or precooked). 

  3. Heat a drizzle of oil in a pan over medium heat. Add onions and sauté until brown. 

  4. Add beans to the pan with onions, cook for 2 minutes. Then add tomatoes and corn, cook for an additional 2 minutes.

  5. In a large bowl, mix together the chicken, rice, beans, corn and lettuce. Serve with salsa, sour cream and shredded cheese. 

Vegan Alternative: To 'veganize' this recipe leave out the chicken, cheese, and sour cream!  Add extra black beans for more protein!
