Ingredients for 4 Servings

2 Pints Grape or Cherry Tomatoes

2 Tbsp Oil, divided

1/2 Tsp. Paprika

Salt and Pepper

1 Tsp Cumin

1 Tsp Coriander

6 Oz. Feta Cheese

8 Eggs

4 Slices of Bread

1/3 Cup Basil Leaves, roughly chopped

1  5 Oz Pkg of Greens

1 Tbsp Lemon Juice

Directions

  1. Heat oven to 450°F.

  2. On rimmed baking sheet, toss tomatoes with 1 tbsp oil, paprika, and 1/2 tsp each salt and pepper and roast for 8 mins.

  3. Sprinkle tomatoes evenly with feta cheese, cumin, and coriander. With back of spoon make 8 wells in tomatoes and bake 2 to 3 minutes. Remove from oven.

  4. Crack 1 egg into each well and bake 3 to 5 minutes more. Sprinkle with basil.

  5. In large bowl, whisk lemon juice and 1 Tbsp oil. Add greens and 1/4 teaspoon each salt and pepper and toss to coat. Serve alongside baked eggs with toast.
