Fettuccine Alfredo with Veggies

Serving Size: Makes 6 servings, 268 cal/serving

Ingredients:

Olive Oil, - 2 Tbsp

Broccoli, - 1 Cups

Squash, - 1/2 Cup

Red Pepper, - 1/2 Cup

Carrots, - 1/2 Cup

Sauce:

Salted Butter, - 1/2 Cups

Heavy Whipping Cream, - 1 Cup

Parmesan Cheese, - 2 Cups

Noodles, - 1 Cup

Veg Sause:

Cashews, - 1/2 Cup

Olive Oil, - 2 Tbsp.

Onion, - 1/2 Cup

Garlic, - 6 Cloves

Almond Milk, - 2 Cups

Lemon Juice, - 1 Tbsp

Salt, - 1 Tsp

Directions

  1. Put pasta in pot and boil for 7 min. or until done. Drain and Set aside.

  2. In another pot put oil and saute vegs. 

  3. Add Sauce in another pot and Heat.

  4. In same pot add Sauted Vegs. and cooked Noodles.

  5. Heat untill warm and serve.
